New Zealand Spinach (Kōkihi)

Native to both NZ and Australia this fleshy-leaved spinach variety thrives in warm temperatures and will continue to grow in cooler temperatures long after other spinach varieties have finished.  Will readily self-seed or prune down to come again.  Leaves are best eaten cooked although a few smaller young raw* leaves add a nice touch to a salad.

*Raw spinach shouldn't be consumed in large quantities due to its high oxalate content which can hinder the absorption of essential minerals like calcium and iron and cause stomach issues.
